Hi gals,

Will be having a backyard enagagement party to keep costs low. It will be Asian themed as FH proposed on our Vietnam holiday!

Wondering if anyone knows any good recipes that can be prepared in advance for around 80?!!! I am particularly thinking a dish or two in tiny Noodle Boxes?

Engagement will be in Jan, so summer recipes etc are great. Will prob have the BBQ turning over too to keep the masses happy and order some platters from Coles!!!

Suggestions welcome please ladies!!

We're going to have Nori Rolls and Vietnamese Spring Rolls.... not noodle box meals but still easy to prepare in advance.

Both have recepies on the back of the seaweed paper/rice paper packets - thats what we use.

PS Vietnam is where we want to go on our honeymoon - always wanted to go there.. was is good? Where did you stay.. hotels?? (sorry off topic)

Thanks Bonni Binx! Will check out the recipes.

I LOVED Vietnam....(as well from the engagement bit!) We backpacked, so stayed at some cheaper places, but then the last couple of nights stayed at a 5 star place that was only US$85 a night for a whole Junior Suite!!

I recommend going to the places we did.....in particular Ho Chi Minh, then to Mui Ne and/or Nha Trang (BEACHES!!) then we went up to Hoi An (my favourite place. Tailor central! I had 5 dresses, 3 shirts, and a jacket made for under US $200!) then to Hue. To Hanoi and Hao Long Bay! Phew, it was exhausting with the bus trips and trains, but so worth it and I would go back in a heart beat! :heart:

Thanks cinders - will definately have to check those places out. We thought the accomodation might be expensive but will have to look a bit more into it :D

Depends on what kind of accommodation you are after, but seriously, you will easily get something nice for US$30-40. Good luck!

Are there beautiful beaches/islands in Vietnam??? I really want to go too, vietnamese food is my fave!

Hey Ella Bella. There are some really great beaches in Mui Ne and Nha Trang...along that area. Also if you get to go to Hao Long Bay there are some secluded little beach coves there that feel llike you are the only people in the world!B ut I dont think the beaches in Vietnam are quite as nice as Thailand. However, it has so much variety from the big cities, to the quaint fishing towns, to the mountains etc. Well worth the visit and I will be going back one day!

Keep the recipes coming everyone else. I have bought the mini noodle boxes so def need lots of inspiration now!!!

Ooo we had "thai chicken meatballs" and they went down a treat...I always add an egg to the mix. We used about 3.5kg mince for 100 or so people and we did have some left over, not much but a little bit.

1kg Chicken Mince
1 cup of breadcrumbs
3tablespoons of sweet chilli sauce
1 tablespoon of ground coriander
4 spring onions chopped
1 cup chopped fresh coriander
1-2 tablespoons of lemon juice
2 table spoons of oil.

Preheat oven to 200 deg.

Mix Chicken & breadcrumbs in a large bowl, add the chilli sauce, ground coriander, spring onion, lemon juice & fresh coriander & mix well with hands.
With damp hands roll meat balls into little meat balls small enough to eat with your fingers, or make them bigger for hamburgers.

Add the oil to a fry pan & in batches brown the outside of the meatballs. I found it easiest to plonk them in & rather than try to turn them individually I just picked up the pan & swooshed it around so the balls all rolled around getting brown & had no sticking!
Then pop them on a tray in the oven to cook inside for little meatballs approx 5-10 mins. For Burgers 15-20mins.

Serve with sweet chilli sauceâ

Oh yum. They sound amazing. Thanks so much, will def be using that recipe as well as some fresh spring rolls and maybe some sort of noodle salad dish? Hmmm I really need to nut the recipes out soon! Gosh, I will be cooking all day and night!!! :?
