What to do with leftover ricotta?

Hi all,

I have half a tub (around 200g) of ricotta leftover from the weekend when FH and I made homemade ravioli :heart: :heart: yum

Anyway, I can't really think of what to make or do with it, as it’s the sort of thing I really only buy for a particular recipe. Does anyone have favourite recipes for meals/desserts/snacks – whatever, using ricotta? Would love you all to share, I can’t be bothered google searching it lol :D

You can go into WW Meal maker and type Ricotta and it shows several recipes.

You can use ricotta in cakes - they end up being quite moist

type "ricotta cake" into google :)

I love this Spinach & Ricotta Dip - super easy, just bring the quantity of the other ingredients down a bit so you only need 200g of ricotta.

you know whats simple and really yum...

pasta di ricotta... my MIL makes it as she is old school italian....

all you need is
plain 'sugo' (that is a bottle of tomato pasta sauce)
Ricotta
Fresh baby Spinach (handful)
Fresh Basil (to taste)
Salt(to taste)
Pepper (to taste)
Pasta

Just heat up the tomato pasta sauce add spinach and basil and once warm stir through the ricotta...add to pasta thats it!

It is very very easy to make home made spinach and ricotta canneloni.

You just buy the shells from Safeway or wherever, even Aldi has them, then just google the mixture.

It was 4 things as far as I can recall, Spinach, ricotta, nutmeg and an egg.

If you have a tin of tomatoes in the cupboard, you can make that your sauce by adding salt, sugar, olive oil and mixed Italian herbs to taste.

It sounds more complicated than it is really. Highly recommend it!

A really, quick, easy, simple dessert / sweet snack - mash a quantity of ricotta with a tablespoon of nutella or jam - delish!

Otherwise, mash together with something savoury as sandwich fillings during the week...
