Cheap and Easy low fat soup recipes??

Hi Guys,

We are trying to cut down our food bill each week so im thinking of making a nice batch of vegie soup on a sunday to take to work for lunch each day.
Do you have any cheap and easy vegie soup recipes?

Minestrone Soup! It would have to be my fav. If you go to a market and get all your vegies it will be heaps cheaper too

Is this freezable Riss?

Yes, DH's mother freezes her's. We usually get at least three days out of it, I have never frozen our's though.

Not sure about low fat, but here's my best soup recipe!

Otherwise here is one of my Weightwatcher's recipes:

Tomato and Veg soup:

Serves 2, Prep. & cooking time: 20min

500ml stock, made with stock cube
250ml tomato juice
100g bean sprouts
1 tablespoon of peas
1/2 small cauliflower, broken into sprigs
1 celery stick, sliced
Tabasco or Worcestershire sauce, to taste

Place everything (except Tabasco/Worcestershire sauce) in a saucepan and bring to the boil and simmer until the celery and cauliflower are cooked.
Add Tabasco or Worcestershire sauce.
Serve :)
