Slow cooker recipes

Hi Chickies,

I have only just gotten my slow cooker and im in love :heart: I made an easy italian chicken recipe last night for tea using a base meal packet and it was fantastic!!

I really want to make things without using the base packets - please share your easy slow cooker recipes with me :D

So glad you got one Emy! There are so many, it's the beginning of a love affair for you! :D :lol:

DH and I love Lamb Shanks...

Herb & Garlic Lamb Shanks

Two lamb shanks (the meaty ones)
Container of Vegetable Real Stock (pre-made)
Garlic
Herbs
Fill the slow cooker about 1/3 with the veggie stock. Score the outside of the lamb shanks and rub crushed garlic into them, sprinkle on some herbs and some salt, I just use mixed herbs from a jar, but fresh ones would be even better. Place the lamb shanks into the stock. Cook for either 8-9 hours on low or 4-5 hours on high

AND...

Beef Casserole

In a jug 2 cups beefstock
1 can tomatoes
Pinch of salt & pepper
Bit of paprika
2 tablespoons plain flour
Then just put the beef (about 400grm) in the slowcooker with desired veggies pour the mixture from the jug in stir and serve on a bed of pumkin and potato mash.

Yummmmmmm!!!!

How long do i cook for Riss?
Also if i set it before work - it will be on for around 9 hours - i have noticed that most recipes say 8 hours on low - will an extra hour matter?

That's exactly the same time with us Emy and it's generally fine when we do it :D

It is very hard to overcook things Emy! I love my slow cooker.. cuz I leave it on for 8-9h on Low and everything turns soo good.. not overcooked or burned... so It does not really matter how long it's on Low, withing reason ofc (High is different).

I do alot of my slow cooking with the bases.. but I would love to not do it! So keep your fav recipece coming girls!!

I LOVE my slow cooker, it gets used sooo much over the cooler months. With 7 of us in the house there is rarely ever leftovers.

Anyways, I entered my Beef and Vegie Stew into a McKenzie's foods comp and won.....a new slow cooker and some sauce packets, legumes etc.

Oh and this makes a huge batch and is freezable :)

DH makes an amazing cassarole

Steak cut up into little cubes
Tin of crushed pineapple
Tin of crushed Tomatoes
Peas, corn and capsicum
Whistershere sauce (don't know how to spell that sorry)
Tomato Sauce
Use gravy to thicken.

He usually cooks on low for as long as you can cause then the meat is super tender we just serve with mashed potato and pumpkin!

Is there anything i can substitiute the soup mix with Trisha? I have coeliac so i cant have barley.

Sure can. You can substiute it for legumes, or grab the other McZenzies packs of the split peas, chick peas etc. If you have a look on their site you will see all the diff ones you can get.

You don't even have to use them. I just put them in for make it more filling and the extra nutrience for the kids.

8 Lamb Shanks
1T olive oil
1 onion
2 cloves crushed garlic
2 sticks celery, chopped
2 carrots, chopped
400g can crushed tomatoes
1.5C beef stock
½ C red wine
1T dried oregano
1T dried rosemary
1T cornflour
1T water
1T soy
2T honey


I halve this for just FH and I. We either serve with mash or add some rissoni about 45 mins before serving :heart:

Beef Stew with Apple Dumplings

•2kgs Stew beef; 1 1/2" cubes
•1/2C Flour
•3 beef stock cubes; crush
•1/2 teaspoon pepper
•2 cups onions; sliced
•2 garlic cloves; minced
•1/2 cup beef broth
•3/4 cup apple juice
•2 tablespoons vinegar
•1 teaspoons thyme
•1 teaspoons curry

Dumplings:

•1 cup apple sauce
•2 eggs; well beaten
•2 teaspoons parsley; chopped
•2 cups flour
•2 teaspoons baking powder
•1 teaspoons salt

Coat meat with mixture of flour, salt and pepper. Combine meat, onion, garlic, beef broth, apple juice, vinegar, thyme and curry in removable liner. Place liner in base. Cover and cook on auto 7 hours; or high 4 to 5 hours; or low 8 to 10 hours. Remove cover and place tablespoons of dumpling batter on top of stew. Cover and cook on high for 20 minutes.

To make dumpling batter; blend applesauce with eggs and parsley; add flour, baking powder and salt and beat into egg mixture.

Slow cooked roast chicken.

Soo easy to make, wash whole chicken and pat dry. Sprinkle one sachet of french onion soup mix over the chicken and 'rub in'.
Place chicken in slow cooker - you can place sliced onions and garlic in the bottom of the cooker if you like. Cook on lowest setting all day.

This generates so much of it's own juices...it comes halfway up the chicken! And is really moist and delish. The juices make a yummy gravy.

Sausage Casserole

1kg sausages
sliced onion
can of Heinz big red tomato soup
2tbls brown sugar
1tbls white vinegar
1tsp curry powder
1tsp mustard powder

I chop up the sausages while they are part frozen (makes it easier) but they
could be left whole. place in the crock pot.

Cover with all the other ingreds mixed together.
I put it on auto for 5 hours but this can also be done in the oven.
Best served with mashed potato and peas.

1.5kgs beef round steak, cut into 1 1/2-inch cubes
1/2 cup plain flour

1 cup raisins
2 apples, peeled, cored and sliced
1 cup diced onion
1 teaspoon salt
1/2 teaspoon pepper
1 cup beef stock
2 apples, unpeeled, cored and finely chopped
Fluffy rice

Dry beef well with a paper towel. Mix flour and curry powder. Coat meat cubes with flour mixture. Place meat in crockpot. Add garlic, raisins, sliced apples, onion, salt and pepper. Pour in stock and stir to blend. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours until meat is tender.

Before serving, stir in additional curry powder to taste (up to 1 tablespoon) and chopped apples. Serve over hot fluffy rice.

Serves 6 to 8.

You can also make desserts in the slow cooker.:)

So this is the slow cooker meal i made Tuesday night - its just using a base packet but it was so good and highly recommend it!!

Dolmio slow cooked chicken meal base
800gms of chicken (the recipe said legs but i risked it and used breast - wasnt dry at all!!)
2 celery sticks
2 carrots
400g diced tomato
140g of tomato paste
I added in a chilli as well as we like spicy foods!

I served with pasta :D
