Strawberry and Ricotta Muffins

I thought I would share this yummy muffin recipe I made today :)

Strawberry and Ricotta Muffins
 
Ingredients
1 Punnet of Strawberries (blueberries also work good!)
2 tbsp strawberry jam
2 Eggs
1/4 cup milk
1 tspn vanilla essence
125gms melted butter
1 1/2 cups SR flour
2/3 cup caster sugar
150gm ricotta
 
Method
Preheat oven to 180deg.
Whisk eggs, milk, vanilla, jam and add cooled melted butter.
In a separate bowl, combine sifted flour and sugar.
Make a well in the centre, add egg mixture and stir gently.
Fold through fruit and crumbled ricotta, stir until just combined.
Divide between muffin trays and bake for 25-30 mins or until springy.

Thanks for sharing Mrs JJ, they sounds delicious. I will add strawberries and extra ricotta to the grocery shopping list.

I love muffins :heart: This is my favourite muffin recipe, FH is a fan too.

Orange Poppy Seed Muffins

2 eggs
1 cup sour cream
1 cup milk (skim is fine)
60ml olive oil
90ml honey
3 tbsp poppy seeds
1 tbsp grated lemon rind
280g self-raising flour (I substitute wholemeal)

1- Place eggs, sour cream, milk, olive oil honey, poppy seeds and lemon rind in a bowl and combine well.
2- Add flour to above mixture and mix until just combined
3- Spoon mix into greased muffin tin and bake for 25- 30 minutes at 180degrees.

Optional icing
60g cream cheese
1 tbsp lemon juice
125g icing sugar
Combine all of the above in a food processor and blend until smooth. Top cold muffins with icing. (cold muffin? no such thing in this house :lol: )

My other favourite muffin recipe is for banana choc chip muffins but I will not be making them for awhile cos of the price and quality of bananas at the moment 8O

I have never made muffins with sour cream, I can't wait to try them!

:oops: :oops: I have just realised that I called the recipe Orange and poppy seed muffins then included Lemon as the ingredients :oops: :oops:
The recipe is originally lemon and poppy seed but can be made with orange substituting the lemon.

Wow, I feel like a dunce now. Two recipes for the price of one :lol:

I'm making these today! Thanks so much for the recipe hun, I can't wait to try them! :heart:

I use sour cream in my banana bread/ banana muffins, makes it so moist and tasty! I'll get the recipe out to share :)

Ohhhh yum they sound so good - I really need to check this section more often :lol:

Also thanks Bronzestar, I have been thinking about making orange & poppyseed muffins for our little trip next week but didn't know where to get a good recipe!
