Pasta with roast pumpkin, feta & basil

Ingredients (serves 4)
• 375g fettucine
• 1/2 small butternut pumpkin (500g), peeled, sliced 1cm thick
• 1/4 cup (60ml) olive oil
• 2 tbs lemon juice
• 1 tsp finely grated lemon zest
• 125g feta, crumbled
• 3 roasted red capsicum (180g), thickly sliced
• 1 cup baby basil leaves

Method
1. Preheat the oven to 200°C.
2. Cook the pasta in a saucepan of boiling salted water until just tender, then drain.
3. Meanwhile, toss the pumpkin with 1 tablespoon of the olive oil and lay flat on a baking tray. Roast in the oven for 15-20 minutes until tender.
4. For the dressing, place the remaining 2 tablespoons of oil in a small bowl with lemon juice and zest. Whisk to combine.
5. Combine the drained pasta, feta, capsicum and basil in a bowl. Add the dressing, season with salt and pepper, then toss to combine. Gently stir through the roasted pumpkin and serve.

Basil pesto chicken

Ingredients (serves 2)
• 200g dried fettuccine
• 2 tablespoons olive oil
• 2 single chicken breast fillets, thinly sliced
• 2 tablespoons basil pesto
• 1 cup cream
• shaved parmesan, to serve
• basil leaves, to serve

Method
1. Cook fettuccine according to the packet directions.
2. Meanwhile, heat oil in a large, non-stick frying pan over medium-high heat. Add chicken and cook, stirring often, for 5 minutes or until brown.
3. Add pesto, cream, salt and pepper to frying pan. Reduce heat to medium-low. Cook for 5 minutes, or until sauce has thickened slightly.
4. Drain pasta. Add to pesto mixture. Toss over low heat until well combined. Transfer to serving bowls. Top with parmesan and basil. Serve warm.

Orecchiette with broccolini, smoked trout & anchovy http://www.blackmores.com.au/News/Detail.aspx?ArticleId=8949

Ingredients
200 grams broccolini florets & stalk (chopped into small pieces, blanched & refreshed)
2 tablespoons pinenuts - toasted
400 grams dried orecchiette (ear shaped pasta)
6 tablespoons olive oil
4 golden shallots finely sliced
1 teaspoon hot chilli flakes
12 anchovies
1 ½ cups smoked trout flesh
6 cloves of garlic – crushed
6 tablespoons chopped Italian parsley
Sea salt
Cracked pepper
Juice of 1 lemon

Method
1. Cook the pasta in boiling salted water until aldente (about 10-12 minutes)
2. Meanwhile, heat olive in a frying pan with the onion, garlic & anchovies and cook gently until softened & broken down to a paste.
3. Add the broccolini, pinenuts, chilli, parsley and plenty of pepper and toss until hot.
4. Drain off the pasta and place into the sauce mixture, add the trout, and a squeeze of lemon and serve.
Serves 4

Sautéed pork medallions with lemon and parsley
Cut 1 pound of pork tenderloin into half-inch-thick slices and pound to quarter-inch thickness. Heat 1/4 cup olive oil in a pan. Dredge pork medallions in flour seasoned with salt and pepper. Cook for 2 to 3 minutes per side, turning once. Remove. Pour off fat, add 1/2 cup dry white wine, and cook until wine is almost evaporated. Add lemon juice and a few capers. Spoon sauce over meat. Serve with parsley and lemon wedges.

Herb-roasted chicken cutlets
Heat oven to 325°F. Mix 1 Tbsp minced fresh tarragon, 1/4 cup chopped fresh dill, 1/2 cup chopped fresh parsley, and salt and pepper to taste. Place chicken in a baking dish with 1 Tbsp olive oil, the herb mixture, and 1 cup chicken stock. Roast about 15 minutes. Serve with the herb sauce.

Stir-fried spicy beef
Thinly slice 1 pound of flank steak across the grain into bite-size pieces. Chop 1/2 cup basil and mix with beef. Cook 1 1/2 Tbsp minced garlic in 1 Tbsp peanut oil until slightly brown. Add beef-basil mixture and 1/4 Tbsp red-pepper flakes; cook for 2 minutes. Add 1 Tbsp soy sauce and the juice of half a lime and serve.

Grilled chicken with pesto sauce
For pesto: In a blender or food processor, purée 2 cups fresh basil, 1 garlic clove, a pinch of salt, 2 Tbsp pine nuts, 1/2 cup grated Parmesan, and 1/2 cup extra-virgin olive oil. For chicken: Season 1 pound of thin chicken cutlets with salt and pepper. Grill for about 4 minutes per side. Paint with pesto and serve.

Chicken braised in soy sauce and lemon
Brown bone-in chicken pieces in a few tablespoons of olive oil. Remove from pan. In same pan, stir in some chopped garlic. Add 1/2 Tbsp minced lemon zest, a pinch of cayenne, 2 Tbsp soy sauce, 1 tsp sugar, and 1/3 cup water; stir. Add the chicken, cover, and simmer for about 15 minutes, turning the pieces once. Add lemon juice and more soy sauce to taste.

Chicken tikka with yogurt sauce
For yogurt sauce: Mix 1 cup yogurt with 1 tsp minced garlic and some lemon juice, salt, and pepper. For chicken: Cut boneless chicken breast into 1" chunks and marinate in 1/4 cup yogurt, 1/4 cup ground cashews, and 1 tsp each of ground cardamom, ground coriander, minced ginger, and minced garlic for 30 minutes. Grill until brown and cooked through (about 7 minutes); serve with yogurt sauce.

Broccoli Beef Recipe

Ingredients
•3/4 pound flank or sirloin, sliced thinly across the grain
•3/4 pound broccoli florets
•2 tablespoons high-heat cooking oil
•2 cloves garlic, very finely minced or smushed through garlic smusher
•1 teaspoon cornstarch, dissolved in 1 tablespoon water

For the beef marinade
•1 teaspoon soy sauce
•1 teaspoon Chinese rice wine (or dry sherry)
•1/2 teaspoon cornstarch
•1/8 teaspoon freshly ground black pepper

For the sauce
•2 tablespoons oyster sauce
•1 teaspoon Chinese rice wine (or dry sherry)
•1 tablespoon soy sauce
•1/4 cup chicken broth

Method
1. Marinate the beef: Stir together the beef marinade ingredients in a medium bowl. Add the beef slices and stir until coated. Let stand for 10 minutes
2. Prepare the sauce: Stir together the sauce ingredients in a small bowl.
3. Blanch the broccoli: Cook the broccoli in a small pot of boiling, salted water until tender-crisp, about 2 minutes. Drain thoroughly.
4. Heat a large frying pan or wok over high heat until a bead of water sizzles and instantly evaporates upon contact. Add the cooking oil and swirl to coat. Add the beef and immediately spread the beef out all over the surface of the wok or pan in a single layer (preferably not touching). Let the beef fry undisturbed for 1 minute. Flip the beef slices over, add the garlic to the pan and fry for an additional 30 seconds to 1 minute until no longer pink, Pour in the sauce, add the blanched broccoli and bring to a boil. Pour in the dissolved cornstarch and cook, stirring, until the sauce boils and thickens, 30 seconds.

Here a healthy meal 's suggestion all are nice and very tasty recipe that like you very much,and mostly like Spiced Lamb Cutlets with Coriander Pumpkin,Protein Packed Pancakes,Pasta with roast pumpkin, feta & basil , this are a really a nice recipe I like it and I think that all like it very much.
